Low carb pizza? Yes, yes please!

I've ALWAYS loved cooking, and for the past two years I've learned so much. Since I've been in college, we all know college leaves no room for culinary creativity, that's why when I can finally get back to Pennsylvania for spring break on Friday, my mom will have A LOT of food to try haha !
I saw this great tutorial on Delighted Momma (she has so many great recipes!) and I can't even wait to try it! I've never made my own crust before, especially a healthy crust, and I'm so excited to try it!


What you will need:
  • 1 1/2 cup of flax seed meal
  • 2 tsp of baking powder
  • 1 tsp of oregano
  • 1 tsp of salt
  • 1/2 tsp of Stevia or natural sweetener
  • 3 eggs
  • 3 tbs of olive oil
  • 1/2 cup of water

Directions:
  1. Preheat oven to 425 degrees.
  2. Mix dry ingredients together.
  3. Add wet ingredients and mix well.
  4. Let the dough sit for about 5 minutes to thicken up.
  5. Spread dough on a large round pan.
  6. Bake for 15-20 minutes or until cooked through.
  7. Add toppings, place back in oven to melt cheese.
  8. SO EASY!

When I try this, I think I want to add some spices to the recipe, just to give it a little kick! I can imagine it now, banana peppers, mushrooms, black olives...I can't even wait!

Also, I would like to do a quick little shout out. If you've read my last post you'll know that I'm starting a diet and on my way to get back in shape. Not even an hour after my post, I had a email from Anna, a great girl who gave me even more motivation and help to pursue my journey to get back into shape! I need a change.

Alright everyone, I know I haven't been blogging a lot. As some of you know, I'm a Biochemistry major, and the workload has been insane lately, balancing everything has become way too hard lately and I decided today that I need a change.

As of today, I am 5'2, 130 pounds.
I'm usually around 115 pounds.

I know I'm not overweight or anything, I played softball for 12 years so I do have an athletic, hourglass figure. Did you ever want to do something....just for yourself? I haven't been happy with myself lately, and it's time to get back on track. Time to start running. Time to eat healthy. Time for a new start. I haven't exercised at all since transferring to this college in early January, so starting fresh is going to be so hard. Exercising and eating healthy seems almost impossible on a campus where they aren't vegetarian friendly!
